Our photographer Bliss just dropped her healthy kale and quinoa salad recipe
Staying indoors can sometimes mean falling into the trap of the comfortable - working from home in sweats while munching on anything and everything instant, with some random Netflix show blaring in the background. The good news is that you can always reorder your day. All it takes is one decision.
While we're in that space, put away those chips and instant ramen. Our photographer Bliss, who openly shared her own story of falling into the junk food binge pit, just dropped her healthy quinoa and kale salad recipe.
Let's just say this is the perfect, low-fuss summer salad that you need to restart your health journey. Full recipe below.
Restarting your health journey only takes a few ingredients
INGREDIENTS:
1 cup quinoa
2 cups water or any broth of your choice
salt and pepper to taste
1 cup kale
1 cup chopped cucumbers
1 cup cherry tomatoes
Lemon juice to taste
Any oil and vinegar-based dressing
INSTRUCTIONS:
Rinse the quinoa well.
In a medium pan, put quinoa, water, salt & pepper. Let it simmer for 12-15 minutes, or until the water is completely absorbed by the quinoa. Make sure to stir quinoa so they won’t clump together.

When quinoa is cooked, turn off the stove and mix in the kale while the quinoa is still hot. Then mix the cucumber and tomatoes. You can opt to squeeze in some lemon to brighten the taste.
Cucumbers are the perfect ingredient to a cool summer salad
Add a couple of tablespoons of your dressing of choice. You can eat as is or as a side to your favorite meat or main dish.
You can also store your salad in the refrigerator for a few days. Serve cold for that perfect summer side to any dish. Enjoy!
